Kaju curry (cashew curry) is a rich and flavorful dish made with roasted cashews in a creamy, spiced gravy. Here's a simple recipe for you to try:

Ingredients:

1 cup cashew nuts (kaju)

1 large onion, finely chopped

2 tomatoes, pureed

1 tablespoon ginger-garlic paste

2 green chilies, chopped

1/4 cup fresh cream

1/4 cup yogurt (curd)

2 tablespoons oil or ghee

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon garam masala

1 teaspoon coriander powder

1 teaspoon cumin powder

1/2 teaspoon kasuri methi (dried fenugreek leaves)

Salt, to taste

Fresh coriander leaves, for garnish

Instructions:

1. Roast the cashews: Heat 1 tablespoon of oil or ghee in a pan. Add the cashews and roast them on low heat until they are golden. Remove and set aside.

2. Make the gravy: In the same pan, add another tablespoon of oil. Add cumin seeds and let them splutter. Then add finely chopped onions and sauté until they turn golden brown. Add ginger-garlic paste and chopped green chilies. Cook for 2-3 minutes until the raw smell goes away.

3. Tomato base: Add the tomato puree and cook until the oil separates. This takes around 5-7 minutes on medium heat.

4. Spices: Now, add turmeric powder, red chili powder, coriander powder, and cumin powder. Cook for another minute.

5. Creamy base: Add the yogurt and mix well. Then add fresh cream, kasuri methi, and salt. Stir the gravy well and let it cook for 2-3 minutes.

6. Combine: Add the roasted cashews to the gravy. Mix them well and let the curry simmer for 5 minutes so the cashews absorb the flavors.

7. Finish: Add garam masala and garnish with fresh coriander leaves.
