Here's a simple recipe to make Gobi Manchurian:

Ingredients:

For Frying:

1 medium-sized cauliflower (gobi), cut into florets

½ cup all-purpose flour (maida)

¼ cup cornflour (cornstarch)

1 tsp ginger-garlic paste

½ tsp black pepper powder

Salt to taste

Water (as needed to make a thick batter)

Oil for deep frying


For Manchurian Sauce:

1 tbsp oil

1 tbsp garlic, finely chopped

1 tbsp ginger, finely chopped

2-3 green chilies, finely chopped

1 medium onion, finely chopped

1 small capsicum (bell pepper), diced

2 tbsp soy sauce

1 tbsp tomato ketchup

1 tbsp red chili sauce

1 tsp vinegar

1 tsp sugar (optional)

1 tsp cornflour mixed with 2 tbsp water (for thickening the sauce)

Salt to taste

Spring onions for garnish (optional)


Instructions:

Step 1: Fry the Cauliflower

1. Blanch the cauliflower florets in boiling water for 3-4 minutes, then drain and set aside.

2. In a bowl, mix the all-purpose flour, cornflour, ginger-garlic paste, black pepper powder, and salt. Add water slowly to make a thick batter.

3. Dip the cauliflower florets in the batter, ensuring they're well-coated.

4. Heat oil in a deep pan and fry the coated florets until they turn golden and crispy. Drain on paper towels to remove excess oil.

Step 2: Prepare the Sauce

1. Heat 1 tablespoon of oil in a pan or wok. Add the chopped garlic, ginger, and green chilies, and sauté for a minute until aromatic.

2. Add the chopped onions and capsicum. Stir-fry on high heat for 2-3 minutes until slightly softened but still crunchy.

3. Add the soy sauce, tomato ketchup, red chili sauce, vinegar, and sugar. Stir well to combine.

4. Add the cornflour slurry (cornflour mixed with water) to the sauce and cook until the sauce thickens. Adjust salt to taste.

5. Toss the fried cauliflower into the sauce and stir until all the florets are coated.

Step 3: Serve

Garnish with chopped spring onions, and serve hot as a snack or side dish.
