Here's a simple and delicious recipe for Chicken Curry:

Ingredients:

500 grams chicken (with bone or boneless, cut into pieces)

2 large onions, finely chopped

2 tomatoes, pureed

1 tablespoon ginger-garlic paste

2 green chilies, slit (optional)

2 tablespoons oil or ghee

1 teaspoon cumin seeds

1 bay leaf

1/2 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

1/2 teaspoon cumin powder

1 teaspoon garam masala

1/2 cup yogurt (whisked)

Salt, to taste

Fresh coriander leaves, for garnish

Water, as needed

Instructions:

1. Heat the oil: In a large pan or kadhai, heat 2 tablespoons of oil or ghee. Add cumin seeds and bay leaf, and let them splutter.

2. Sauté onions: Add the finely chopped onions and sauté until golden brown. This will take about 5-7 minutes on medium heat.

3. Ginger-garlic paste: Add the ginger-garlic paste and green chilies, and cook for 2-3 minutes until the raw smell disappears.

4. Tomato puree: Add the tomato puree and cook until the oil starts separating from the sides. This will take around 5-7 minutes.

5. Spices: Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix everything well and cook for 1-2 minutes.

6. Add chicken: Add the chicken pieces to the pan and coat them with the spice mixture. Sauté the chicken on medium heat for 5-6 minutes until it’s lightly browned.

7. Yogurt: Add the whisked yogurt gradually, stirring continuously to prevent curdling. Cook the mixture for another 2-3 minutes.

8. Simmer: Add about 1-2 cups of water, depending on how thick you want the curry to be. Cover the pan and let the chicken cook on medium-low heat for 20-25 minutes, or until the chicken is fully cooked and tender.

9. Final touch: Once the chicken is cooked, sprinkle garam masala over the curry and give it a good mix. Let it simmer for another 2-3 minutes.

10. Garnish: Garnish with fresh coriander leaves.
