Semolina, also referred to as suji or rava, is used to make the popular South Indian breakfast dish known as upma. Here is a straightforward recipe for upma:
Instructions:
-Cumin and mustard seeds are added to hot oil in a pan. Let them cough.
-Add chopped green chilli, ginger, and onions. Onions should be sautéed until translucent.
-Mixture of vegetables should be cooked for a few minutes until just tender.
-Add the semolina (rava/suji) and roast for 3 to 4 minutes, or until it is fragrant and light brown.
-To taste, add salt and water. Mix thoroughly to eliminate lumps.
- Once the water has been absorbed and the upma is cooked, cover the pan and cook it on low heat for 5-7 minutes.
- Add lemon juice after turning the heat off. Mix thoroughly.
